Easy Pumpkin Oatmeal Bake

 

Ingredients: 

  • 2 cups gluten free quick cooking oats
  • 1 teaspoon baking powder
  • 1 ½ teaspoons pumpkin pie spice
  • ½ teaspoon cinnamon
  • 1 ½ cups unsweetened vanilla almond milk
  • 1 cup canned pumpkin
  • ¼ cup maple syrup
  • 1 tablespoon ground flaxseed
  • 1 tablespoon melted coconut oil
  • 1 teaspoon vanilla extract
  • Pecans (per your taste)

Directions: 

1.Preheat oven at 375 degrees.

2.Grease baking dish with coconut oil.

3.Mix all ingredients in a large bowl. (Best if you mix dry ingredients first and then add in the wet ingredients.)

4.Pour mixture into the baking dish then crumble pecans on top.

5.Bake the dish for 30-35 minutes or until golden brown.

**Best served warm with maple syrup drizzled on top.
